We don’t get to do Cornelli lace that often anymore. But for a 60th anniversary it is just perfect. Plus of course the decorator did an amazing job. Happy anniversary you two!
The Not-so-humble chocolate chip cookie. 
I know many of you think we have the best cookies in the world, and I don’t disagree. However I do think there is always room for improvement. During the shut down I experimented quite a bit in order to make our process simpler. The original intent was simply to save on labor, not necessarily to save on food cost. The end result however saved on both. In a classic example of “I don’t know what I’m doing running a business“ we decided to lower our cookie price. I know I’m supposed to save food cost and labor cost and keep charging the same amount so we make more, but I’m just not that bright, and fairly stubborn. Not only does the cookie cost less I think it is even better. We have begun browning the butter before making the cookies. These are now Browned Butter Chocolate Chip Cookies and they really are something. Crisp on the outside and chewy in the middle. Deep nutty flavor from the butter. No margarine, real chocolate chips, all butter. Just...heavenly.

My heart is happy, but I am tired.
